Homemade Strawberry Syrup

I’ve recently decided that I will not be buying any more store bought maple syrup, not only because of the expense, but also all of the preservatives and junk in them. Poor Jada has been such a good sport about eating plain pancakes. Well, digging through my freezer yesterday I found a pack of frozen strawberries. I decided to use them to make some syrup to surprise my little angel with. This came out so good, I wanted to share it with all of you, especially since I just posted a great recipe for pancakes.

Homemade Strawberry Syrup

  • 1/2 c. sugar
  • 1 c. water
  • 1 1/2 c. unsweetened strawberries, mashed

In a med. saucepan bring water and sugar to a boil. Stir in mashed strawberries, and bring back to boil. Turn the heat to low, and simmer uncovered for about 10 min, stirring occasionally. Cool and put in a jar to refrigerate.

*If you want it a little thicker, add about 1 Tbsp. corn starch.

I filled an empty glass peanut butter jar full with this one batch. Makes about 18 oz.

    Hi Kendra,

    Just a thought, I was told by a CNC (Certified Nutrition Consultant) NOT to put potatoes in the fridge as it increases the starch content.
