2-Bean Chili
I love this recipe. I found it in a (free) Campbell’s recipe book a few years ago and have been making it ever since. Even the kids gobble this one up! I especially appreciate how QUICK and EASY it is!
2-Bean Chili
- 1 lb. ground beef
- 1 green pepper, chopped
- 1 onion, chopped
- 2 Tbsp. chili powder
- 1/4 tsp. pepper
- 3 cups Tomato Juice
- 1 can (about 15 oz.) each kidney beans and great Northern beans, rinsed and drained
- Optional garnish: Sour cream, sliced green onions, shredded cheddar cheese, chopped tomato
Cook beef, green pepper, onion, chili powder, and pepper in skillet until browned. Pour off fat.
Add tomato juice and beans and heat through. Top with garnishes (we like shredded cheddar and sour cream).
