Back On Track With A Budget

My empty fridge

I had to follow up on how our grocery shopping went for this week after admitting to totally blowing our budget last week. I was hoping that $100 dollars worth of food would last two weeks. I’m proud to say that all I had to spend on food for this week was $18.34, and that’s with my husband buying a $6 block of cheese! (Yes, I got onto him about that. Him and his cheese!!)

Our fridge was totally bare (as you can see), but I scavenged through the freezer and cabinets, determined to get a weeks worth of meals out of whatever I could find. Here’s what I came up with:

Dinner:

White Chicken Soup (I’ll have to share the recipe later…)

Venison Steak and baked beans

Venison Stroganoff over rice (I’m trying out my friend Hannah’s deer recipes!)

2-Bean Chili

Taco Bake (a new recipe for me to try)

Honey Chicken Tenders (Tyson) and flavored rice

Lunch:

Pizza

Chicken nuggets, corn, applesauce

Turkey wraps

Hot dogs + french fries

Fish sticks and veggies

Breakfast:

Bagels and cream cheese

Eggs

Waffles

Pancakes

Cereal

Smoothies

Parfait (fruit, yogurt, and granola)

Who knew I had all of that stuff just sitting around waiting to be made! Hopefully I won’t fall off the budget wagon again… at least hopefully not for a while!

    wow girl! that’s amazing that you have such a nice menu with such a small amount in your fridge!

    I need to do that today too….take inventory on what we have (which isn’t much!) and try and make it last the rest of the week….shouldn’t be a problem…I know hubby will eat pancakes for dinner everynight, if that’s what I make…he’s so easy to please!

    Isn’t that amazing? All of those meals, just sitting and waiting to be made, were there all the time! How is it we always think we don’t have anything to eat? Maybe we just don’t have what we WANT to eat! Good job…your family is going to eat WELL this week.

    Now…I’m off to go check out MY pantry!

    looking forward to you sharing another recipe, we always like yours, I think some of my picky eaters are similiar to yours, ( you know, no mushrooms?)

    I have this little game I play. I only shop once a month except for milk and fresh veggies. I try to wait as long as possible before I head to the store that month. I have made it to the 15th before. I clean out my entire pantry and fridge before I go. You would be surprised what you can scrounge around and find to make. Fun! Fun!

    I am very bad at this… I HATE the empty fridge and pantry… it brings about BAD feelings!!! Maybe it is my up-bringing… Farm families with LOADED pantries….. My husband is self employed and I find great comfort knowing that we have 4-8 weeks worth of food in the house at all times. I know that some would find that extreme and other would think that isn’t enough. I am also the “be prepared” type…. what if something were to happen to our nation?? The store shelves would empty out fast!!!!

    It is amazing what you can come up with when you don’t feel like there is anything left!!! Way to go sticking with your budget!!
