Aunt Vicky’s Quick & Easy Vegetable Beef Soup

veggie beef stew (Medium)

I am, at this very moment, devouring a bowl of this delicious beef stew! My husband’s late aunt shared this recipe with me. It’s quick, easy and cheap, and we all love it! So, in honor of her, I’ll share it with you.

Quick & Easy Vegetable Beef Soup

  • 1 lb. hamburger, browned and drained
  • 1  (46 oz) can V-8 juice
  • 2 cans Veg-all (do not drain); OR three cans of each- corn, green beans, carrots; OR leftover veggies chopped.
  • 1 envelope onion soup mix

Mix all ingredients well in a crockpot, or large saucepan. Cover and heat through. The longer it simmers, the better the flavor gets!!

    Looks delicious! I love “quick and easy” recipes, plus I’ve been working on making more homemade soups (as opposed to using the old standby canned ones!) I bet it would be especially good this summer when we have fresh corn, beans, and carrots from the garden. Thanks for sharing!

    Mine is similar…
    1 pound ground beef
    2 cans mixed veggies or whatever leftover veggies I have for a couple of days
    2 quarts of my homemade canned tomatoes
    Elbow macaronni

    Yum!

    Question for you…sorry if I sound dumb….is it 1 can of corn, 1 can of green beans and 1 can of carrots, or 3 cans of corn, 3 cans of beans, and 3 cans of carrots?

    Actually, that is a good question. The way I said that was a little confusing! It would be one can of each :) Thanks for asking!!
